Platanos Fritos con Cajeta – Fried Plantains with Goat Milk Caramel

Sure, it is easy to eat a jar of cateja using only a spoon. It is just as easy to put it on anything else you can think of.

Here in upstate New York, food does not generally come cheap, with the very strange exception of plantains which are frequently cheaper than regular bananas. As no one other than myself seems to be interested in them, I have an ever ready supply of almost perfectly ripe plantains ever ready.

Plátanos Fritos con Cajeta - Fried Plantains with Goat Milk Caramel

  • 1 very ripe plantain
  • 1 tbsp butter
  • Cajeta as needed

Trim the end of the plantains. Split in half lengthwise. Lay cut side down and peel back skin. Heat butter over medium high heat in a large skillet until just melted. Cook the plantains for approximately 2 to 3 minutes on both sides, until golden brown.

Serve generously topped with cajeta.
